Soft and full on first contact. Well structured, with acidity in proportion to thickness and richness. Complexity and taste intensity that culminates in the persistent citrus finish. Accompanies shellfish and fish in white sauces, cod croquettes, smoked fish, seafood or mushroom risotto, pork cooked with fruit or exotic spices. Mild, cow-like gruyeres, such as those of Naxos or Tinos.
